Easy as...pie!
So, you have your turkey, your brine kit, your cranberry sauce...what about a pie?
Here is a pretty simple pumpkin pie and a way to dress it up a bit.
Preheat oven to 425 degrees
Ingredients:
15-oz can pumpkin (not pumpkin pie, just pure pumpkin)
14-oz can of sweetened condensed milk
2 large eggs
1 teaspoon cinnamon
1/2 teaspoon ginger
1/2 teaspoon nutmeg
1/2 teaspoon salt
(we add about 1/8 tsp ...just a pinch...of ground cloves because we love flavor, but it’s not necessary)
1 9-inch pie crust...this one is a frozen store bought shell...comes in packs of two (see below for how to use the other one)
Whisk all ingredients together, let sit for 5 minutes and mix again before putting in pie shell.
Place pie shell on baking sheet and fill.
This recipe makes a bit more than you need...do not flood...the before baking picture shows how much to fill the shell.
Bake at 425 for 15 minutes
TURN TEMP DOWN to 350 degrees and bake for 35 minutes.
Looking for something to do while it bakes....and want to add decoration to pie?
Use the other pie shell to make shapes..take dough out of the tin and lay on a flat surface, then create... use small cookie cutters.
Or, we didn’t have any that fit the theme, so we cut some circles and thin strips of crust put them on a piece of parchment in the pie tin.
When pie comes out of oven, brush the shapes with a bit of egg white and sprinkle with sugar (or cinnamon sugar) and bake for only about 5 minutes until just the lightest brown....they will burn fast, better light than dark.
Place your decorations on the pie....enjoy!
